Betta Gumbo looking to open Windsor location in Spring 2022 – The Denver Post

Betta Gumbo, Loveland’s longtime cajun cuisine king, is looking to expand out of the Sweetheart City, expecting to open a new location in Windsor early next year.

Owner Clay Caldwell said that over the years he has noticed a strong regional pull from residents living east of Interstate 25 in Weld County. Because of this and the continued success of his restaurant, Caldwell said he was ready to open up a new location in a new town and a new county.

“We believe it is a strong financial move,” he said Friday afternoon.

Betta Gumbo has served Loveland residents since 2013 when it opened along Fourth Street. Seven years later in early 2020, the store relocated to The Foundry, opening the newest location with more space than ever before.

Caldwell said the continued success of Betta and their plans to open a second location is validation for his business idea. He said a big part of that success is the team he has built around him, one he has continued to train and prepare for manager status when this new location opens.

“It is awesome to build a team that is capable of carrying weight and taking care of the community every day if they come in; it doesn’t fall on my shoulders every day now,” he said, “I believe it will be a great time in the Windsor community.”

“We are extremely excited to get to know Windsor and them get to know us,” he later added.

Caldwell said they are working on the permit stage for now and expects that the business will be open to the public springtime next year.

“A lot of that will depend on lead times for HVAC and equipment.,” he said. “COVID has added a few more weeks to everything.”

The new location will be located at 526 Main St. in Windsor near the corner of Sixth Street and Main Street.
